Ingredients:
- 500g pork belly
- 100g preserved mustard greens (Mei Cai)
- 2 tbsp cooking oil
- 1 tbsp sugar
- 1 tbsp soy sauce
- 1 tbsp Shaoxing wine
- 1 cup water

Instructions:
1. Soak the preserved mustard greens in water for about 30 minutes to remove excess salt. Rinse and chop finely.
2. Cut the pork belly into thick slices and then into smaller pieces.
3. Heat oil in a wok or pan, add sugar and let it caramelize.
4. Add the pork belly pieces and stir-fry until they are slightly browned.
5. Add the chopped preserved mustard greens, soy sauce, and Shaoxing wine. Stir well to combine.
6. Pour in the water and bring to a boil. Then reduce heat, cover, and simmer for about 1.5 to 2 hours until the pork is tender.
7. Check the seasoning and adjust if necessary.
